Today I had the opportunity to make one of my favorite dishes, Soutzoukakia with Potatoes and Green Beans, with one of my nieces, Kaliopi. Soutzoukakia — traditional Greek meatballs — are served with potatoes or rice. For this recipe, I added potatoes and green beans in order to make an easy “one pot meal”.

Greek Soutzoukakia with Potatoes and Green Beans

Soutzoukakia with Potatoes and Green Beans is a delicious and balanced one pot meal that is kid-friendly, and tastes even better the next day. I love having leftovers in the refrigerator for lunch the next day. It saves me from buying less-than-healthy takeout and I know what kind of ingredients are in my food.

Soutzoukakia with Potatoes and Green Beans

I used ground turkey for this recipe, but you can always substitute ground beef, pork or veal, whichever you prefer. You can also substitute the green beans for another green veggie like okra, lima beans, peas, or asparagus.

This dish is up there in my Top 10 of favorite Greek meals. You’ll notice that I leave the bread out of my meals to make them lower carb. I don’t notice any difference in the taste and like not having the fillers in my food.

Ingredients

1 1/2 pounds ground turkey (or ground beef, ground veal, or ground pork)

2 pounds Yukon Gold potatoes, peeled and quartered (or any potato – red, Idaho, etc)

1 lb. Green Beans, ends trimmed and washed (3-4 handfuls)

1 onion — half grated for the turkey mixture and half chopped for the sauce

1 28 oz. can Tuttorosso crushed tomatoes

1 tbsp. fresh spearmint leaves

1 tsp. dried oregano

1/2 tsp. cinnamon

1 tsp. salt

1/2 tsp. pepper

1/2 tsp. garlic powder

1 tbsp. olive oil

 

Optional Toppings:

Chopped Parsley

Grated Parmesan Cheese

 

How to Make Soutzoukakia with Potatoes and Green Beans:

  1. Combine all of the above ingredients, except for the olive oil and crushed tomato, in a large bowl.
  2. Place a large dutch oven on medium heat and add the olive oil.
  3. Shape the meat mixture into oblong patties. Place carefully in the hot oil, adding additional patties as you shape them. You may need to cook in two batches, depending on the size of your pan.
  4. Once the soutzoukakia are browned on the bottom, flip with a small spatula. You’ll know they’re ready to be turned if they can easily be flipped. If you can’t turn them wait a minute or two for them to cook longer and then turn.
  5. Once both sides are browned, remove from the pot onto a plate. They will not be completely cooked at this point.
  6. Add your chopped onion to the pan and lightly season with salt and pepper. Cook the onion until it is translucent.
  7. Add the tomato and stir to combine. Then add your soutzoukakia back to the pan, nestling them into the sauce.
  8. Add potatoes in a single layer on top of the soutzoukakia. Lightly salt and pepper them. Then add the green beans on top. Again, lightly seasoning with S&P.
  9. Add about 1/2 cup of water to the pan and give the pan a gentle shake to distribute the liquid.
  10. Bring up the heat to medium high to bring the tomato to a boil. Then, reduce heat to simmer and cover. This dish takes about 40-50 minutes until the potatoes are fork tender. Check at 40 minutes to ensure you don’t overcook.
  11. Serve 3 soutzoukakia with 2-3 potato wedges and a small helping of green beans. Top with Parmesan cheese and chopped parsley, if you’d like.
