Set your Instant Pot to Sauté and add the olive oil. Once the display reads “Hot,” add the sliced onion and cook until soft and translucent, about 5–7 minutes. Stir in the chopped garlic and cook for another 30 seconds, just until fragrant.
Step 2: Brown the Beef
Working in batches, add about one-third of the beef cubes to the pot. Brown the meat for about a minute on each side before removing it and repeating with the remaining beef.
Browning the meat develops rich flavor and creates the caramelized bits that make the finished stew even more delicious.
Step 3: Build the Stew
Return all of the browned beef to the pot. Add the salt, pepper, cinnamon, and crushed tomatoes, stirring everything together until the beef is evenly coated.

Lock the lid and make sure the steam valve is set to Sealing.
Cook on the Meat/Stew setting for 40 minutes.
Allow the pressure to release naturally for 15–20 minutes before carefully releasing any remaining pressure.

If the meat isn’t quite tender yet, pressure cook for another 5 minutes followed by a 10-minute natural release.

Delicious Greek style beef stew -- made in the Instant Pot! Authentic Karpathian Beef Stew (Instant Pot Greek Beef Stew) is flavored with onion, garlic and cinnamon for a delicious savory, yet slightly sweet flavor. Paleo, low carb, and gluten free.
- 4 lbs. boneless beef chuck roast cut into even-sized chunks
- 1 large sweet yellow onion thinly sliced
- 1 clove garlic chopped
- 14 oz. can crushed tomato
- 1 tbsp. ground cinnamon or 1 cinammon stick
- 2 tsp. salt
- 1 tsp. pepper
- 1 tbsp. olive oil

Press the saute button on your Instant Pot. Add olive oil. When the screen reads "hot" add onion to the pot and saute until translucent. Add the garlic and stir.

Add 1/3 of the meat chunks and saute with the onion. Saute for 1 minute, and then remove the meat chunks, leaving the onion. Repeat this step until all of the meat has been sauteed.

Add all of the meat back into the pot. Add salt and pepper and mix to combine.

Add the tomato sauce. Stir to combine.

Place the lid on the pot and seal. Ensure that the steam valve is closed.
